Would you believe that these are my first made-from-scratch pancakes. Not only that, but they are 'Ed friendly'. i.e. Gluten/Dairy free. And they were a hit! Add bananas, blueberries and real maple syrup. Kai is currently eating his 4th one! I could only manage 2 myself.
Recipe:
2 cups gluten free flour
3 tsp baking powder
1/2 cup caster sugar
1 organic egg
2 cups soy milk
75g melted butter
Sift flour, baking powder and caster sugar into a bowl. In a separate bowl whisk egg, milk and butter. Add wet mixture to the dry mixture and whisk until smooth (my arm is a bit tired!).
Heat a non-stick pan and spray a tiny bit of oil. Pour in 75ml at a time and flip once bubbles appear on the top. Only 1min on the 2nd side.
Keep pancakes warm on a plate with foil while you make the rest. Serve with your favourite topping. I managed to make about 11 or 12 from this mixture. Enough for 4 people I think.
